Recipe of the Week: FroYo Granola Fruit Pops

Looking for a delicious (and healthy!) summertime treat? Try this recipe from McCann’s Irish Oats for fruity froyo pops with a crunchy addition of granola.

Ingredients

FroYo

  • 3 cup Greek Yogurt
  • 1 cup Almond Milk
  • 2 tbsp Honey
  • 1/2 cup Raspberries
  • 1/2 cup Blueberries
  • 1/2 cup Blackberries

Granola

  • 1 1/2 cup McCann’s® Quick Cooking Rolled Irish Oats
  • 2 tbsp Light Brown Sugar, Packed
  • 1/4 tsp
  • 1/4 tsp
  • 1/4 cup Coconut Oil
  • 1 tbsp Coconut Oil
  • 1/4 cup Honey
  • 2 tbsp Honey
  • 2 tsp
  • 1/4 cup Almonds, Chopped or Whole
  • 1/4 cup Pecans, Chopped or Whole

Equipment

  • 6-12 Popsicle Molds
Granola
  1. Preheat oven to 300ºF.
  2. In a medium bowl, combine oats, almonds, and pecans.
  3. In a small saucepan, combine brown sugar, salt, cinnamon, coconut oil, and honey. Bring to a boil until all ingredients are combined and the sugar is dissolved, then remove from heat. Add the vanilla.
  4. Pour the sugar mixture over the oats and nuts; mix until thoroughly coated.
  5. Once the mixtures are fully incorporated, pour granola onto a parchment-lined baking sheet. Place the sheet into the oven for 15 minutes, stirring gently halfway through the cooking time. Once out of the oven, stir the granola periodically until cool.
  6. After making popsicles, store any extra granola in an air-tight container and enjoy for up to 1 week!
Popsicles
  1. Mix greek yogurt, vanilla, honey and almond milk until smooth.
  2. Fill popsicle molds by altering layers of yogurt, granola and fruit.
  3. Add a wooden stick and freeze overnight.
